After working as a chef at an Italian restaurant in Tokyo for nine years, in September 1999, at the age of 32, he opened his first ethnic restaurant, Golden Burning, in Shibuya. Despite the shady image of a back alley near the Shibuya Dogenzaka Tokyu main store and the entrance to the hotel district, it was flooded with media coverage. Driving the ethnic boom. Two years later, he opened “Golden Burning Roppongi” in what would become the castle town of Roppongi Hills. The bold façade that uses the entire wall of a two-story detached house caught the attention of the media, and was flooded with media. With the opening of Hills, for some reason, many sightseeing buses stopped in front of the store, and it prospered. After that, in a residential area of Nakameguro, he quietly opened the Singaporean cuisine “Five Star Cafe Gosei Keihan” and the spare ribs and sangria store “BB R Apartment”. Growing into a restaurant where reservations cannot be taken. Later, the Roppongi store was changed to ``Cafe Singapura'', which serves Singaporean cuisine, and the Shibuya store was changed to ``Pakchi Bar Golden Burning,'' a coriander specialty restaurant. ​ I have seen many restaurants. A popular restaurant was bought by a company in another industry whose main business was doing well, but it was shut down due to lack of operational know-how. A chef who used to work at a restaurant in a famous hotel opened his own restaurant, but he was unable to express his individuality and was buried in the city and went out of business. He used his early retirement money to open his dream ramen shop, but it closed after a year. I've heard a lot of stories like that. There is always a cause. Just because you have confidence in your cooking doesn't mean that you will succeed, or if you open a restaurant, customers will come. One thing is certain, if you have the money, you can own a restaurant, but if you don't have the know-how, you will eventually leave the market. Success cannot be achieved without three things: money, know-how, and ideas.
In fact, statistics show that 80% of newly opened restaurants go out of business within 2 years, and the remaining 80% go out of business within 5 years. Running a restaurant is almost like gambling. Vague things like dreams, confidence, and intuition are useless. Is there a formula for winning that gamble? The answer is yes. It's just a matter of noticing it.

Five Star Cafe is a long-loved Singaporean restaurant located in a back alley of Nakameguro.
